One of the most important meals of the day is your breakfast. Let me show you how to make a British classic sausage sandwich in the air fryer. Your choice then of accompaniments - will it be red or brown sauce?

While there are a number of various sausage types available, this recipe is a British classic featuring a plain old linked pork sausage. I opt for the taste the difference range from the supermarket, but of course I also recommend supporting local businesses and farm shops too.

A classic breakfast sausage sandwich is a staple of British life. When accompanied by an egg and some ketchup it is a Friday morning treat for me and keeps me going right through until lunch.

Ingredients

There is not much to the sausage sandwich, however the variety and type of sausage do mean it can be a different taste depending on the raw ingredients used. I opt for a plain pork linked sausage.

In Scotland they have a square sausage available which is sausage meat in a square shape but not in a skin. More along the lines of a sausage patty that you might find when you eat a specific 'McBreakfast'.

Instructions

The process to cook a sausage in the air fryer is fairly simple. To ensure you do not burn the sausage, I recommend to reduce the temperature to 180C/350F. This will make sure you have an even cook outside and fully cooked inside.

Top Tip - Sometimes the air fryer can have a tendency to overcook if left too high. I recommend reducing the oven temperature recommendations on the packet of sausages down a little. (This goes for most oven meals - to convert the temperatures to air fryer times try reducing the temperature by 20C to 30C and the cooking time reduce by 20%.

Preheat the air fryer to 180C or 350F. Start it at 20 minutes.

While the air fryer heats up, prick the sausages with a sharp knife 3 times in each along equal points. This will help stop them splitting in the cooking process.

Put the sausages in the air fryer. No oil is needed but you can give them a spray with olive oil cooking spray if you wish.

Set them off cooking for 15 minutes.

Half way through cooking, turn the sausages over. While not absolutely necessary, so don't worry if you forget - it just helps to cook them evenly.

While they finish cooking, butter some bread.

Once the sausages are cooked, slice them on a cutting board. Slicing them lengthways helps them sit flatter on the bread.

Lay the sausages on the bread. If you are having any sauce, add it now.

Scaling Up

This recipe is obviously for two sausages only. If you have a larger quantity required, just make sure not to overfill the air fryer. Also consider increasing the cooking time to 20 minutes if you have more than 8 sausages in the pan.

Substitutions

While this recipe is really simple, there are some changes you can make to suit certain diets.

  • Vegetarian - Quorn do a good range of vegetarian sausages which work well in the air fryer. These can be cooked from frozen (but take a little longer, around 18 to 20 minutes.)
  • Bread - You don't have to use sliced bread. You can use a bagel, or toast the bread.
  • Healthy - The air fryer is a healthy way of cooking, but for additional health caution, use low fat sausage and a low calorie cooking spray.
  • Un-Healthy - You can of course make this really dirty and add cheese and bacon on top.

Variations

Multiple countries have a variety of sausages to try. A staple German sausage is the Bratwurst and this works really well as a mealtime sausage in a sandwich. The Italians have given us spicy sausage so that's worth a try too.

  • Spicy - Add some chorizo or nduja paste to the bread along with the sausage.
  • Deluxe - Melt on some cheese to and place a fried egg on the top of the stack before closing the bread.
  • Sauce varieties - Plenty of options here with the sauce. The usual ketchup or brown sauce are a given, but what about trying mustard? It would nearly be a hot dog snack instead (have you seen my Chicago Style Hot dogs?)
  • Sausage Breakfast Wrap - Use a flat bread or naan bread instead of regular bread.

Equipment

While this post is all about the sausage air fry method, you can also make a sausage sandwich without an air fryer. Using the conventional oven at 200C for 30 minutes will cook the sausages perfectly.

If you wanted to grill them, use a medium/high grill setting and cook for 15 minutes turning occasionally.

Storage

Cooked sausages will store in the fridge for a couple of days. Only put them in the fridge once they have cooled down. Precooked sausages can be eaten cold.

If you need to re-heat them again, make sure they are piping hot before consuming. Never re-heat meat that has already been reheated once.

Top tip

Keep trying different varieties of sausage. Some taste and work better for a breakfast than others do.

Toasting the bread before buttering also makes for a tasty treat.

Can I use frozen sausages in the air fryer?

It is always recommended to defrost meats first before cooking. For non meat substitutes such as Quorn, these can be cooked from frozen.

    Prepare the raw sausage by pricking a few holes along the length to stop it bursting.

  • Put the sausages in the air fryer and set them off cooking for 15 minutes.
  • While that is cooking, prepare some bread by spreading a light coat of butter on two slices.
    Turn the sausages over half way through the cooking time.

  • Once the sausages have finished cooking, slice lengthways and place across the bread. Add some red or brown sauce as you wish.

Notes

You can make this dish in the oven, on the BBQ or under the grill. So many options for cooking a sausage. However I found the most convenient way to cook a breakfast sausage sandwich was in the air fryer. 
Consider using different types of sausage as the main ingredient. There are lots of type such as square sausage, vegetarian, sausage patties etc. Also a variety of flavours such as Cumberland, Lincolnshire, Italian, German Wursts.
