Beef, melted cheese. Nice.

I love this recipe. It's such a simple idea but offers so much taste and flavour.

Who doesn't love melted cheese on anything? This is a great recipe which has everything you want in a dirty burger. Very similar to a Burger King melt - Cheese, meat, flavour.

I love this dish. It offers so much flavour and taste for the effort involved. Lots of bang for the buck. Picking the best melting cheese for burgers is a good way to make sure you have a stringy cheese burger.

Ingredients

  • 3 tablespoons vegetable oil
  • 2 large yellow onions, halved and cut into thin half-moons
  • ½ teaspoon granulated sugar
  • Kosher salt (or rock salt)
  • ¼ cup (½ stick) unsalted butter, softened
  • 12 slices crusty rye bread, each about ⅓ inch thick
  • 2 pounds ground beef (80% lean)
  • 2 tablespoons Worcestershire sauce
  • ½ teaspoon freshly ground black pepper
  • 1½ cup (about 4 ounces) shredded Havarti or Swiss cheese
  • Dijon or spicy brown mustard (optional)

Method

In a large skillet over medium heat on the stove, warm the oil. Add the onions, sprinkle with the sugar, cover, and cook until the onions are tender and golden brown, 15 to 20 minutes, stirring occasionally. Season to taste with salt. Remove from the heat.
Butter the bread on both sides and set aside.

Prepare the grill

Prepare the grill for direct cooking over medium-high heat (400° to 500°F).
Mix the ground beef, Worcestershire sauce, 1 teaspoon of salt, and the pepper, incorporating the spices evenly. Gently shape into six oval patties of equal size, each about ¾ inch thick. With your thumb or the back of a spoon, make a shallow indentation about 1 inch) wide in the centre of the patties to keep them from forming a dome as they cook.

For ease, you can try using a patty shaper or a burger press to get the burger a consistent shape.

Cooking on the grill

Brush the cooking grates clean. Grill the patties over direct medium-high heat, with the lid closed, until cooked to medium doneness, 9 to 11 minutes, turning once. Transfer the patties to a rimmed baking sheet. Lower the temperature of the grill to medium heat (350° to 450°F).

Grill the rye bread

Grill the bread slices (one side only) over direct medium heat until toasted, about 1 minute. Transfer the bread, toasted sides up, to a work surface.
Evenly divide the caramelized onions on six of the toasted bread slices and top each with a patty. Scatter the cheese over the patties. Place the remaining bread slices, toasted sides down, on top of the patties.

Using a wide spatula, carefully place the patty melts back onto the cooking grate and grill over direct medium heat until the bread on the bottom is toasted, about 1 minute, and then carefully turn over the sandwiches and toast the other side. Serve the patty melts warm with mustard, if you want the Burger King melt taste.

What is the best cheese for melting on burgers?

A good melting cheese will withstand a bit of heat but not stay solid for too long. Try a mozzarella or a gruyere for a the best melting cheese for burgers.

How to melt cheese on a burger.

The easiest way to get the top of the burger hot enough to melt the cheese when on a griddle is to cover the burger with a bowl or tin to keep the steam in. This will melt the burger when cooking. I use a bread tin and you can fit 2 burgers under it at once.

  • 100 g cheese grated

  • Using a wide spatula, carefully place the patty melts back onto the cooking grate and grill over direct medium heat until the bread on the bottom is toasted, about 1 minute, and then carefully turn over the sandwiches and toast the other side.
    Serve the patty melts warm with mustard, if desired.

Notes

When on the grill, avoid pressing and turning the beef. They should only be turned once in the cooking process otherwise you risk disturbing all the good juices.
These burgers can be cooked in advance and then reheated for a couple of minutes to get ready to serve. Make sure to reheat all the way through though before serving again. Important - Never reheat if they've already been reheated once before.
