This hot and spicy chicken stir fry dish is a quick and easy recipe using Schwartz Jerk Chicken Seasoning. Only takes a few minutes to put together once. For better results, marinate the chicken overnight for a fuller flavour.

The Jerk Chicken Seasoning is a simple way to bring flavour to the meat. There are various stages when this can be added but as a general rule, the longer it is on the meat, the more flavour will be absorbed.

This dish is a nice weeknight meal which can be enjoyed all year round no matter what the weather. This dish contains steamed rice however I've not included the cooking process in this recipe as I have two steamed rice dishes which you be used for this. Ingredients

There are two sections to ingredients with this dish. Firstly the chicken and Schwartz Jerk Chicken Seasoning. This is the foundation protein element to the meal. I opt for chicken breast which I then dice up, however you can use pre diced if that helps. Always free range chicken for me.

Vegetables are again quite flexible in requirements. The key ingredients are carrot, onion and garlic but you can add or remove as you wish. If you have something to use up for example a squash, dice it and throw it in. For some chopping tips and hints, see my how to chop an onion post.

  • Garlic (2 cloves)
  • Onion (Diced)
  • Broccoli
  • Chicken (Free range chicken preferred)
  • Schwartz Jamaican Jerk Chicken Seasoning
  • Eggs
  • Steamed Rice
  • Oil (I use sesame oil)
  • Soy sauce

Instructions

While this recipe will make the dish in the featured image picture at the top of the post, I can't stress enough how flexible with ingredients you can be. If you want to make it to the instructions, see below.

  1. Prepare your chicken by dicing it up and cover in the rub.
Sesame oil, soy sauce and lemon juice in a bowl.
  1. In a bowl, mix together the soy, oil and a pinch of salt and a squirt of lemon to make in to a marinade.

  1. Mix all the chicken and marinade together and cover with cling film. Leave this for at least 30 minutes, but ideally over night in the fridge.

  1. In a frying pan, heat a table spoon of oil (I use sesame oil) and add the chicken pieces. Cook them through until a nice golden brown colour and then remove from the pan.

  1. In the same pan, add a bit more oil and fry off the vegetables and garlic for about 10 to 15 minutes on a medium heat.

  1. Crack 3 eggs into a bowl and whisk together with a fork.

  1. Move all the veg to one side of the pan and pour in the egg mix. Let this cook a little for 30 seconds or so.

  1. Mix the egg around until you have a scrambled egg consistency, maybe about 1 to 2 minutes.

  1. Add the chicken back into the pan and mix through. Ensure everything is heated through thoroughly.

Hint: To get a fuller flavour on the chicken, leave the marinade on over night in the fridge.

Substitutions

There is plenty to experiment with for this dish, specifically the way it is served and what it is served with. Try some variations on the rice used:

  • Long grain rice
  • Coconut rice
  • Jollof rice
  • Yellow rice

Try adding in some peas in to the dish in place of the broccoli and you can have a real rice and peas type dish.

Experimenting with Quorn chicken pieces instead of regular chicken will mean this can be a vegetarian dish.

Nut free version

Remember that if you are making a nut free version of this dish to avoid Sesame Oil. Furthermore, be careful of ingredients in the jerk seasoning as they may contain nuts.

Variations

This dish could be served as a jerk chicken wrap or burrito style serving. At the point of browning off the chicken in the pan, continue to cook it through until fully cooked. Then serve the chicken on a fajita, or a flatbread.

  • Spicy - Add a few chillies into the mix to spice things up
  • Cheese - For the ultimate cheesy burrito, add some grated cheese on top
  • Quinoa - For the health conscious (not that this is an unhealthy dish anyway, why not add some quinoa instead of rice.

Equipment

This dish only requires a basic frying pan for most of the cooking process. You can do all this in a wok too if you need more space or have more portions to serve up.

If you want to cook the diced chicken in the air fryer or oven separately then that will work too. Aim for the oven temperatures as follows:

Storage

The chicken can be pre-cooked and then stored in an air tight container in the fridge for up to 3 days. It can then be added to a sandwich or wrap, or re-heated fully again into another dish. Never re-heat anything which has already been re-heated previously.

The dish can be frozen, but rice doesn't freeze well so if you are going to cook it in a batch, consider not adding rice.

Top tip

Just try the chicken seasoned with the Schwartz jerk seasoning on its own on a sandwich or wrap. You could even cook a burger size cut of chicken breast and put that in a burger bun. Always cook to an internal temperature of at least 74C for chicken.

What is best, Jerk Chicken Seasoning vs Peri Peri

Each flavour has a different style. Both are a gentle heat but you'd find jerk seasoning is a bit more authentic when making dishes such as jambalaya or other Jamaican dishes.

Can I use Jerk Chicken Seasoning on the BBQ?

For sure! You can make a BBQ jerk chicken kebab using skewers and covering the diced chicken with Schwartz jerk chicken seasoning.

Plenty of supermarkets stock the seasoning with other herbs and spices. Alternatively you can buy it online at the Schwartz store.

For the Chicken & Marinade

  • 500 g Chicken breast diced
  • 1 tablespoon Soy sauce
  • 2 tablespoon Sesame oil
  • 1 splash Lemon juice Approx ¼ teaspoon
  • 1 Jar Schwartz Jamaican Jerk Chicken Seasoning Enough to cover thee chicken

For the Stir Fry

  • 2 cloves Garlic
  • 1 Carrot diced
  • 200 g Broccoli
  • 1 Onion diced
  • 200 g Cooked rice
  • 3 Eggs free range
  • 1 tablespoon Soy sauce
  • 1 tablespoon Sesame oil

Instructions

  • Dice the chicken and coat in the Jamaican Jerk Chicken Seasoning Rub
    500 g Chicken breast, 1 Jar Schwartz Jamaican Jerk Chicken Seasoning
  • Mix together the soy, oil and lemon juice then put the chicken in this mix. Cover with cling film and leave to marinade for at least 30 minutes, ideally over night.
    1 tbsp Soy sauce, 1 splash Lemon juice, 2 tbsp Sesame oil
  • In a frying pan, heat some oil and brown off the chicken for 5 to 10 minutes. Then once a golden brown, place in a bowl on the side.
    1 tbsp Sesame oil
  • In the same pan, add a splash more oil and then brown the onion for 5 minutes. Then add the garlic, broccoli and carrot and heat on a medium heat for up to 15 minutes until the carrot and onion has softened.
    2 cloves Garlic, 1 Carrot, 200 g Broccoli, 1 Onion
  • In a separate bowl, whisk 3 eggs together, move the contents of the frying pan to one side and then pour the egg mix in the empty side of the pan. Let this cook for a few minutes, before mixing it with the vegetables.

  • Add the cooked rice, then stir in for a minute or so and then add the soy sauce and stir in further.

  • Add the chicken back in the pan and heat through for a few minutes (around 5 minutes). Ensure everything is heated through thoroughly before serving up.

Notes

Feel free to mix up the vegetables and swap them out with different items. There are plenty of options to use up leftover veg.
This is a great meal for after work and can be made really quickly if prepped the evening (or morning) before.
