The versatility of this dish makes it a go to choice for a simple and quick meal. The more time the chicken can get to marinade the better and makes for a tastier dish. The absolute minimum is 30 minutes marinade time, but look to do an hour or two in the fridge for best effect.

In my mind, the one bread which is the winner here is the pitta bread. A simple bread recipe to make and only take 4-5 minutes in the oven to cook. These breads are best cooked on a pizza stone for ultimate puff and rise.

What cut of meat is best for gyros?
I have used chicken in this recipe and opted for chicken breast fillet. To keep costs down you are able to use chicken thigh and remove the skin and leg meat before dicing. This will quite often give a more tasty meat – the closer to the bone the tastier the meat in my opinion!
Other types of meat that can be used are pork and lamb. Lamb is quite a traditional gyros meat and will work well with this recipe too. Don’t be scared to experiment, just ensure that the meat is cooked to the correct temperature for the type of meat it is.

- Mix the maple syrup, salt and souvlaki mix together and spread over the diced chicken. Place in a bag and put back in the fridge to marinade for at least 30 minutes.½ tsp Salt, ½ tsp Maple Syrup, 500 grams Chicken Breast, ½ tbsp Souvlaki Mix
- Chop the veg and share equally amongst kebab skewers. I find it easier to separate them out first on a chopping board and space them in the order to be mounted on the kebab skewer.1 Onion, 1 Pepper
- Place the pieces of the marinated chicken in between the veg and then mount on the skewers.500 grams Chicken Breast
- Cook on the BBQ. You can use a direct heat for 5-10 minutes or indirect for 30 minutes, finishing off on direct to get some charring for 30-40 seconds when done.
