Raclette is a Swiss and French Alpine dish of melted cheese scraped over potatoes, bread or meat. Done on the BBQ, you get the same melted cheese without a dedicated raclette machine.

What is a Barbeclette?

A Barbeclette is a utility to melt any good melting cheese on a barbecue to scrape it on to other food. The cheese can be oozed over the top, but you need to make sure you use a good raclette cheese on your BBQ raclette.

Tasty BBQ Cheese Raclette

Melt some cheese on a piece of homemade bread. How about melting it over a nice pork sandwich in a crusty roll? So many choices of where to melt cheese on to. How about some dough balls made from the simplest pizza dough recipe? Dip them in the melted cheese, or make the raclette and pour the cheese over the top.

The Barbeclette is a really simple tool but useful to have with your BBQ. Having a BBQ cheese raclette option at your party will give it that edge over other barbecues your friends have been to.

What kind of cheese do you use for BBQ raclette cheese?

Finding the best cheese for a BBQ cheese raclette dish is a fairly easy to do. The right cheese is raclette itself, a semi-hard cow's milk cheese made for melting. If you can't get hold of it, Gruyère, Emmental or a young Gouda all melt well, though the flavour is milder and less distinctive.

Gouda is Dutch and Gruyère and Emmental are Swiss, so these are substitutes rather than types of raclette. A standard cheddar works at a push, but it melts faster and looser.

📋 How to make BBQ cheese raclette

Could not be simpler. Get your BBQ heating nicely up. You only need one burner going for this. Pop the BBQ Barbeclette raclette pan on the grill and get it warmed up.

Slice your BBQ cheese raclette block into no more than 5mm slices and place them in the pan.

Let them melt. Once they are bubbling up, scrape it on to a plate or over your food you are looking to make even tastier. Enjoy while it's hot!

"Once the cheese is bubbling and melting away, scrape the raclette cheese over a tasty snack of your choice"

Once the cheese is bubbling and ready, you can use the scraper tool that comes with the Barbeclette to move the cheese from your pan to the plate. Be careful to make sure you use a decent set of oven gloves or hand protection when moving the pan off as it may be hot if it has been directly over the heat when melting your raclette cheese.

🍴 How to clean a Barbeclette

When you come to need to clean your BBQ raclette pan, you will need to ensure it has cooled down fully first of all. Then once all cool, wipe away any excess fat, oil or raclette cheese which may have accumulated. At this point then make sure to wash the pan in warm soapy water and allow to dry fully before storing it away for the next time.

What cheese is the best for BBQ raclette?

Raclette is the best cheese. Gruyère, Emmental or a young Gouda all melt well, though the flavour is milder and less distinctive.

What is raclette best served on?

Home made bread is one of the most tasty snacks I have had this with. A white crusty roll works really well or even some garlic dough balls.

When enjoyed with a nice crisp salad and sharp onion, this makes a great addition to any barbecue with friends and family.

How much raclette cheese should I serve per person?

As a rough guide, allow 150g to 200g of cheese per person when raclette is the main event, or 100g to 150g if it is one of several things coming off the BBQ. People tend to eat more when melted cheese is involved, so round up if you are unsure.

Where can I buy raclette cheese in the UK?

Raclette is easier to find here than it used to be. Larger supermarkets usually stock it in the speciality or continental cheese section, Aldi and Lidl tend to carry it seasonally around Christmas, and cheesemongers and online retailers sell it year round. If you need it to be vegetarian, check the label, as traditional raclette is made with animal rennet and not all of it is suitable.

Is raclette the same as cheese fondue?

No. Fondue is melted cheese in a communal pot you dip into. Raclette is melted cheese scraped over potatoes, bread or meat.

Why does raclette cheese smell strong?

It is a washed-rind cheese, so the aroma is pungent when warm. The smell is much stronger than the taste.

Can you make raclette pizza on the BBQ?

Yes. Melt raclette over a base or dough balls with your usual toppings.

Can you make raclette without a raclette machine?

Yes. A pan on the BBQ or a heatproof dish under the grill works fine.

I'd love to know any ideas for types of BBQ cheese raclette you have used and tried. Is there a favourite cheese you use with raclette? How many types of dishes have you made with the Barbeclette?

❄️ Storing leftovers

Wrap leftover raclette well and keep it in the fridge for up to five days. It freezes for up to three months; defrost in the fridge before melting. Reheat gently and slowly, as cheese can split if it heats too fast.

💭 Extra top tip

The Barbeclette pan does not have to be used just for cheese. It is a nice small pan so is great for cooking dishes such as chorizo sausage, pepperoni and black pudding. These would make great toppings for a pizza. Anything which is small scale and can be cooked on a bbq griddle pan can be cooked on a Barbeclette. You can even do quick BBQ eggs on it!

🥗 Try Serving these sides with Raclette

While you can pretty much melt cheese on to anything, try some of these options. In the ploughman's sandwich you can try swapping out the cheese for melted BBQ raclette.

How about cheesy chips when all the guests from your barbecue have gone home? Melt some raclette over some Ninja Foodi air fryer chips for an extra treat!

My burger patty on rye recipe calls for a melting cheese too. You can add raclette cheese in it's place.

There is also the classic pairing of boiled new potatoes, cornichons or gherkins, pickled onions and a plate of cold cured meats such as salami, ham or prosciutto. The pickles balance the richness of the cheese.

On the BBQ you can also grill vegetables, mushrooms or skewers to scrape the cheese over, or melt it over warm crusty bread or a crispy baked potato.

Drizzled over some home made beef jerky is a great way to use melted cheese too!
