When it comes to having something to dip your pizza in to, this dip will be the business. I make it with a combination of ingredients you probably already have in your kitchen. It shouldn’t work, but it works.

This is a recipe for a garlic and mint mayonnaise dip which combines some standard pantry ingredients to make a sauce for dipping chips, pizza and other comfort food into.

This dip only has a few ingredients needed:

  • Mayonnaise
  • Garlic bulbs
  • Mint leaves
  • Salt
  • Lemon juice

🍽 Instructions

This dish is quite simple but very effective. Essentially the key to a good dip is a nice balance of flavours. We're not doing a full mayonnaise recipe so I won't show you how to make that, but we will use ready made mayonnaise.

Prepare the mayonnaise

To start with, add the two tablespoons of mayo into a small dish.

Peel the garlic

Prepare your garlic by making it into a garlic paste. We need one clove of garlic.

What is a clove of garlic?

A clove of garlic is a segment from a garlic bulb. Garlic bulbs come in 6-10 segments depending on size and variety (much like an orange or a tangerine segment). A clove is one of these segments so where a recipe calls for one clove, it would be one segment. Where it calls for two cloves of garlic, that would be two segments and so on. To use a clove, peel off the skin and only use the inner yellow/white part.

How do I peel a clove of garlic?

The skin can be removed by snipping off both the tip and the stem of the garlic clove and then gently running a knife from tip to stem down one side. You want to cut through the skin but not through the garlic inside. Then it should peel away.
For a quicker method, look at getting a garlic press to help squish the garlic into a paste.

This can be achieved by peeling the garlic clove of its skin and then chopping it finely. To really get a paste for this mix, once you have chopped it up you can then press into a paste with the side of a knife of the back of a spoon. The dip needs to be quite smooth so avoid big lumps if possible.

Chop the mint

Next we need to prepare the mint by chopping it up into a fine portion. Remove the leaves from the stem and use a knife and chopping board to finely chop the mint into small flakes.

Mix it all together and season

Put the garlic and the mint in with the mayonnaise ingredients and stir them all together. You may want to have a taste of it now to see what seasoning is required. Keep in mind you might not need any.

However if you want to add a small pinch of salt, this will help bring out some more flavour. Also an acidic liquid such as lemon juice also helps balance flavours. Getting the balance right takes time and practise so make sure not to add too much and stop when you think there is enough.

Top Tip

If you add too much salt, try to balance out with a little cream to bring it back.

🍲 Variations

While this is quite a simple recipe and there are not too many variations that can go on a dip like this, you can try some of these suggestions:

Heat - Add some chilli flakes to the dip to give it a little kick of spice.

Pepper - some extra seasoning sometimes goes well with this dip.

Naan bread - serve the dip with a BBQ skewer dish for a naan bread style kebab.

🥣 Serving suggestions

I like to incorporate my home made dips and sauces into other dishes which I make during a BBQ or family meal. These dips work really well mixed with a little melted butter and then added on to a garlic baguette to make a garlic bread or even a tasty garlic ciabatta.

This forms part of a recipe for a garlic butter recipe which can be incorporated on to the breads to make garlic bread. The advice I would offer here however is to use this dip for serving with cold items and the butter for putting on hot breads. When mayo gets hot it can clump up and not taste as nice so this is one to be aware of.

Making use of any left over mayo or garlic cloves works well with this dish so if you have a bit left having tried my egg mayonnaise recipe (hey why not try a garlic mayo recipe with your egg mayo?) then you can add them to the ingredients list and use them up to avoid wastage.

❄ Storage

I'd not suggest making any more than you really need in one go. While the recipe is easy to scale up simply by doubling the ingredient quantities, it doesn't store very well after a couple of days in the fridge and it certainly can't be frozen successfully. As it is so quick to make you might as well make it as you need it.

Ingredients

  • 2 tablespoon Mayonnaise
  • 1 teaspoon Chopped fresh mint
  • ¼ teaspoon Lemon juice
  • 1 Clove Fresh garlic Finely chopped
  • 1 Pinch Salt

Instructions

  • Put the two tablespoons of mayo in a small dish
    2 Tbsp Mayonnaise
    mint and garlic mayo
  • Chop the mint and garlic and mix in
    1 Tsp Chopped fresh mint, 1 Clove Fresh garlic
  • Add the lemon juice and salt and mix all together. Chill down for 30 mins in the fridge before serving.

    Made this to have with a few fries as another option because we had no ketchup in. It worked well and the family liked it.
