A winter warmer dish or even a summer BBQ option. Either way, this griddle pork chop with home made apple sauce is a sure fire winner. Griddled pork chops will get a flavour unique to any other way of cooking.

Pork Chops are a versatile meat and can be cooked in many different ways. One of my favourite ways to cook them in on a griddle. A griddle is usually a cast iron pan that sits on the hob. I have taken to getting a griddle plate which sits above two hob rings. This offers a hotplate type surface to cook on. One side is a griddle (with lines searing across). The other side is a flat cast iron surface which can be used for burgers, halloumi etc.

Pork Chop on the Griddle or BBQ?

You can cook this dish both indoors and outdoors. The trick is to get the temperature of the cooking surface hot enough to cook properly. Not too hot that it dries out and burns. Not too cool that the pork chop ends up under done. This is why it is really important to always cook to temperature and not time. For pork you need to be aiming for an internal temperature at the thickest point of at least 63C (145F).

To make sure you get the correct temperature I cannot recommend enough investing in a thermometer for cooking. The Inkbird range are great and are able to be used on a BBQ. These use Bluetooth so you can check the temperature on your phone without needing to be by the BBQ.

Sauce of course

No griddled pork chops are complete without apple sauce. You can of course buy it, but you can also make it with 3 ingredients - apples, sugar and butter. You could always add other things into the mix too for a bit of flavour. These three ingredients will get you a basic sauce. If you make loads of it you can always freeze left overs too and use them another day.

This sauce is also a good filling for an apple pie when you want to create a separate dessert.

Resting meats before and after cooking

When cooking with meats, it is important that you cook them from an ambient room temperature rather than straight from the fridge.

With chops, you should lift them out on to the counter at least 45 minutes before you cook them. This will allow them to gradually warm a little. Cooking from the fridge may take longer to get the inner meat cooked before the outer is too far done.

If in any doubt with meat, check the temperature. Once the cooking is done it is also a good idea to let the meat rest before serving. Only 10 minutes or so. You don't want it going cold. Just enough time to allow the juices to settle and make for a tastier bite.

Pork chops in the oven (reverse sear)

If you have a few to cook, or the chops are thick then consider cooking them in the oven first.

This means the meat will be equally cooked throughout and then you can finish them off on the griddle. The sear at the end will give the charring colour and a crispy finish.

This is also known as the reverse sear method. Normally you'd sear meat in a pan before cooking in the oven - like a lot of beef dishes. Reverse sear is when you cook first and griddle afterwards. Griddled pork chops done using the reverse sear gives it that griddle finish but with a full cook.

Oven cooking times

If reverse searing, cook the chops in a roasting tray or porcelain dish for around 40 to 45 minutes. Make sure the tray is covered with foil and add a splash of oil in with them. Season with herbs and spices again if you wish.

Once the oven time is up, take them out and griddle/BBQ grill either side for a couple of minutes. This will give them some colour.

Ingredients

For the chops

  • 2 Pork chops
  • 1 tablespoon vegetable oil
  • Salt and Pepper Season to taste

For the sauce

  • 1 Apple peeled and cored
  • 50 g Brown sugar
  • 10 g Butter

Instructions

  • Heat up the griddle pan for a few minutes and pour on half of the oil. Let this heat up and carefully rub it round with some kitchen roll.
    While that is heating up, season the raw pork chop with the rest of the oil, salt and pepper (and some herbs if you wish).

  • When the griddle is ready, turn to a medium high heat and place the raw pork chop on the griddle.
    Place the raw pork chop on the griddle.
  • Cook the chop giving a few minutes on each side. Keep turning every few mins until cooked. Depending on the thickness of the chop the time will vary. As always, make sure you cook to temperature and not time. You are looking to achieve an internal temperature of 63℃ (145℉) upwards for the chop.
  • While the chop is cooking, you can dice up the apple into small pieces and measure out the sugar.

  • In a small saucepan, heat the butter and add the sugar and apple. Keep stirring until the apple softens. The sauce is as simple as this. Once softened appropriately, you can blend with a blender or mash with a fork. Put in a small ramakin to serve.

  • When the chop is ready at the appropriate temperature, stand it on the edges to crisp up the rind for a few minutes, before serving with the apple sauce.

Notes

This is a simple dish which can accompany many different foods. I like to serve this with mashed potatoes and a selection of veg.
You can swap out the oil on the griddle for a healthier spray oil if you wish, although a tablespoon of oil is not a huge amount to worry about. Don't use olive oil here though as the temperature will be too hot and it will end up smoking out your kitchen.
