A simple take on a popular dish, my no crust 1 cup quiche is a simple "throw all the ingredients into the pan" and then bake.
This is a recipe for a no crust one cup quiche which is made up of a simple recipe of eggs cheese and flour with the added ability to use up and other ingredients that you may have lay around in your pantry.

The one cup quiche overview
The quiche is a great dish served hot and cold and suitable for all year round. I quite like how similar it is to the mushroom and spinach frittata dish that I have and just like that recipe, you can swap ingredients around as you wish depending on what is available.
The simplicity of this dish it what makes this popular in our house. It's not complicated as there is no pastry to deal with and no cream to add.
UK measurement note
A note on the cup measurement. This recipe uses 1 cup = 250ml (metric cup). If you prefer to weigh ingredients, that works out as roughly:
- 1 cup flour = 125g
- 1 cup grated cheese = 100g (Cheddar, loosely packed)
- 1 cup milk = 250ml
- 1 cup chopped vegetables = around 150g, depending on what you're using
US recipes use a 240ml cup, so the gap is small but worth knowing if you're following a US measuring cup.
Ingredients for a cheese and onion one cup quiche
All the ingredients in this recipe pretty much require 1 cup. While this suits our American friends very well, we don't always use this method in the UK. I prefer grams and millilitres however the unique selling point of this recipe is the one cup method. If you don't have a cup measurer, find a ramakin or small bowl that will hold around 120g flour.
There is a basic set of ingredients to make the quiche which are as follows:
- Cheese - For a more stringy quiche use a cheese like a mozzarella or other Swiss raclette style cheese. For a more potent cheesy flavour, look towards a more mature cheddar cheese or parmesan.
- Onion - Either a red or brown/white onion will be fine for this dish. Just use up whatever you have available in your pantry.
- Eggs - I always opt for large free range eggs to make sure the source of the eggs are known and the chickens are cared for. Where you can support local businesses and farmers too, I ask you to do so.
- Self Raising Flour - The self raising aspect of this dish is what helps it grow in the pan and get a more quiche like 'fluff' to it. You can use plain flour if you don't have self raising but this will also need a teaspoon of baking powder in addition (or bicarbonate of soda) to give it a lift. You can then add further ingredients as you wish to bulk it out such as pepper, tomato, ham, bacon etc. See recipe card for quantities and various options.
How to make a no crust 1 cup quiche
Its a simple case of throwing all the ingredients in and cooking! Easy.
- Line a baking tin with greaseproof paper. Grease the edges too with butter. A cake tin works well as you can release it from the edge using the clip for ease once cooked.

- Mix all the ingredients into a bowl and combine to a sticky mix.
- Pour the mix into the tin and spread around evenly.

- Bake in the oven for 45 minutes at 160℃/320℉/Gas Mark 3. Once cooled it is ready to serve.
Using greaseproof paper or baking sheets cut to size at the bottom of the tin will help make things easier to remove once cooked. Use some butter or margarine to grease the walls of the tin and if you need to keep the paper in place at the bottom too, use some butter for that too.
Substitutions of ingredients for quiche
The basic ingredients of this no crust 1 cup quiche are quite simple that substitutions are not really optional for the main recipe. However adding different flavours can be achieved with additional ingredients.
- Peppers - add a sweet crunch to the texture with a finely diced red pepper. For more guidance on chopping food finely, check out my guide on chopping slicing and dicing.
- Vegetarian - you can leave out any bacon pieces and just have vegetables in there.
- Meat Special - Add more meat such as Chorizo or Nduja paste to give it some spice.
Unfortunately this doesn't really work well as a vegan recipe due to the requirement of eggs and cheese.
Equipment needed to make a quiche
The best type of tin for a no crust quiche are a shallow cake tin or if a deeper quiche is required, consider a tin which expands at the sides.
These expanding cake tins are an ideal tin for a larger quiche. These have a buckle type fixing on the side which allows the tin to loosen/tighten accordingly.
Other cake tins work well but you can also buy actual quiche tins:
- Perfobake Loose Quiche tin - 18cm
- Perfobake Loose Perforated Quiche tin - 25cm
- Loose Based mini flan - for smaller quiches, these come in a pack of 4
How to store a quiche
As the recipe is a no crust quiche I find it best to slice and then serve. Stored in an airtight container in the fridge, the quiche keeps for 3-4 days. Reheat individual slices in the microwave for 60-90 seconds, or in a 160°C oven for 8-10 minutes if you want the top to firm up.
The quiche can stay in the freezer for up to 3 months but should be defrosted before reheating (or eating cold).
To freeze, slice the cooled quiche, wrap each piece in baking paper, then place in a freezer bag. Freeze for up to 2 months. Defrost overnight in the fridge before reheating.
FAQ's about no crust quiches
Traditionally a quiche would have a pastry crust and the contents sit within there. A no crust quiche is cooked in a tin and does not require a pastry crust. These can generally be healthier as there is no pastry to contain extra calories.

After lots of testing and experimentation I have found that 1 large egg to half a cup of dairy works best for quiche. So 1 egg = ½ cup milk. This works nicely with grams and millilitres as its 60g for the egg and 120ml for the milk.
