This is a simple side dish recipe for an egg mayo with pickle mix. The dish can be made in advance and stored in the fridge until ready to use.

Ingredients for Egg and Pickle Mayo
There is only a couple of ingredients needed for this recipe. Obviously eggs and mayo are needed but then for a little extra flavour there are some additions.
- Eggs - always opt for free range eggs where you can. If you have an option to buy locally from a farmer or get delivered from your milkman, this keeps things nice and local and helps support local businesses.
- Mayonnaise - I prefer to use the Helmann's Lighter variety for in an egg mayo mix. There does not seem to be a lot of difference in taste to the regular mayo, but its a bit better for you. Obviously there is also a way to make your own mayo at home if you want to be fully organic.
- Pickles - Dill pickles in a jar can be sliced, or you can get pre-sliced pickles too.

The Recipe

Egg and Pickle Mayonnaise
Ingredients
- 4 Free range eggs
- 2 teaspoon Mayonnaise 2 teaspoon per egg if you want to scale up
- 1 tablespoon Diced pickle
- ¼ teaspoon Salt & Pepper
- ¼ teaspoon Mustard powder
Instructions
- Prick a small hole in the round end of the egg (to stop it exploding) and then hard boil for 15 minutes.
- Cool the eggs in water and then peel. Once peeled, slice and dice the eggs using either an egg slicer or a fork.
- Mix the egg, mayo and all other ingredients together.
- Serve in a ramakin or small dish. Keep covered with cling film in the fridge until needed.

Variations for an egg mayo recipe
There are a couple of tweaks you can make to this recipe. After all it is a simple side dish and there are no rules when it comes to sides!
- Give it a kick - a few chilli flakes or some chopped up chilli peppers will spice up this dish.
- Onion - add a quarter teaspoon of onion powder for some more flavour.
- Herbs - add some home grown garden herbs for a bit of extra body to the mayo.
Equipment and serving
A simple ramekin type dish can be used to serve the egg mayo pickle in. Normally these are the small ceramic or glass dishes that come with puddings like crème brûlée etc. It’s always worth saving one or two (don’t hoard them though, they build up quickly!)
Storage
The mix can be stored in the fridge for up to 2 days. Any more than that and it risks going off. I’d suggest covering it in cling film to avoid any strong egg smells taking over the fridge.
This dish cannot be frozen.
Top Tip
If you are making this for a BBQ side, then take the pressure off yourself and make it all the day before. Store in the fridge over night.
