Perfect for grilling in the summer heat, these BBQ chicken and garlic kebabs take no time to prepare in advance ready for the grill.
This is a recipe for BBQ Chicken and Garlic kebabs which can be cooked on the barbecue or on a griddle in the kitchen. These are a great addition to any BBQ platter which you can serve up quickly.
These kebabs work as a stand alone main meal protein which can be accompanied by a simple crispy baked potato. Otherwise they can be served along with other BBQ options like pork belly bites and raclette cheese.

Keeping a few things ready to cook in advance of having guests round is a quick win when it comes to BBQ preparation. The less you have to do when it comes to cooking the better. The sociable aim of a barbecue is to eat, drink and be merry with friends and family - not spend more time preparing food.

👨🍳 Instructions for making BBQ chicken and garlic kebabs
To make a quality chicken and garlic kebabs the flavour comes from the marinade. Marinade takes time to go into the meat so allow extra time for this section if you can.
Preparation is key
The best prep is that done way in advance. Even better, the longer you can do this in advance, the better it will taste. Getting the marinade on the chicken and leaving it in the fridge overnight will allow those flavours and juices to be absorbed into the chicken meat.

- Step 1: Dice the chicken into chunks, around 2cm square. They don't have to be neat, but need to be of similar sizes.

- Step 2: In a food bag add the diced onion, garlic, olive oil, diced chicken and a pinch of salt and pepper. Mix it all in the bag and then leave to marinade for at least 30 minutes, but ideally between 1 and 24 hours.

- Step 3: Get your kebab skewers and load them up with the chicken, red pepper, courgette, onion pieces, mushroom and anything else you want on there. Alternate the chicken with veg so it isn't all bunched up together.

- Step 4: Cook on the BBQ on a low to medium direct heat for around 15 to 20 minutes - until the chicken is cooked through and the veg has a char colour to it. Serve with halloumi cheese, baked spuds and the rest of your BBQ assortment.
🍴 Useful equipment for grilling kebabs
Placing the chicken and garlic kebabs on skewers and covering for a few hours prior to the BBQ will mean it's just a case of popping them out of the fridge and onto the grill when its time to cook. If like me, you have a fancy BBQ skewer system too like this one, this means it is really easy to rotate the kebabs every so often to stop them burning.

Top Tip
When putting the marinade on the chicken, it is a good idea to add the ingredients to a freezer bag or sandwich bag and then pop in the chicken so you can rub it in all together without getting the garlic smell all over your hands.
❄ Storing leftover chicken
If you (by some miracle!) have some left over cooked chicken on the BBQ, it will last for up to 3 days in the refrigerator. If you wan to keep it longer then you can freeze it for up to 3 months.
If freezing, make sure to place in an air tight bag and label up what the bag contains and when it was frozen. This will help you understand in 3 onths time what is in there.
Make sure to fully defrost the chicken before cooking and ensure to reheat right through until piping hot. Never refreeze anything that has already been frozen.

- 1 Set of skewers Can use wooden sticks. Soak them in water in advance if doing so.

- Finely chop the garlic and then add a pinch of salt and pepper to it. With the back of a spoon or a knife, grind it all down even further.
- Chop the onion into 8 equal pieces (cut in half, then each piece in half until you are left with 8). Put 7 pieces on one side for later. (These are for the kebab skewers.)With the one spare piece, 1 third of it off and dice that third really small. This is going in to the marinade. Put the other bit back with the other 7 pieces.
