A quick lunch snack to use up some German sausage slices including Extrawusrt, Bierwurst & Schinkenwurst. Served in a wrap with a healthy salad.

This recipe shows how to use up some left over ingredients to make up a tasty sandwich wrap as a quick lunchtime meal.

Ingredients for German Sausage Wraps

I was sent a German sausage selection as a substitution on our weekly shop for a pizza recipe. While I'll give them a try, they are certainly not my first choice for a pizza topping so thought I'd try them in a wrap.

  • Extrawusrt is an Austrian recipe using beef, pork and bacon fat.
  • Bierwurst is normally made with finely minced pork and beef and then seasoned with garlic, pepper and other spices. Despite the translation of its name "beer sausage", it doesn't actually contain beer in its preparation.
  • Schinkenwurst is a German cold cut sausage typically containing pork, large chunks of ham, and a variety of spices
  • Salad ingredients in this recipe include tomato, lettuce, cucumber and other similar ingredients. Take a look at my Greek salad recipe for ideals on what can go in the wrap.
  • Tortilla wraps are the basis of a wrap. You can make your own wraps or buy premade ones.

The Dust Bros seasoning mix

I am a huge fan of the Dust Bros seasoning and opted to use the Everything Epic mix for this dish. However you can use just plain salt and pepper for seasoning. For more info on the Dust Bros range, take a look at my review of their BBQ rub range.

Instructions to make these wraps

The prep of the ingredients is what takes the time for this recipe. However if you have a selection of leftovers then it will be a case of pulling everything together and placing in the wrap.

Butter the wrap
  1. Step 1: Butter the wrap using a bit of butter, or spread some mayo if you prefer.
Place the salad on one third of the wrap
  1. Step 2: Place the salad on one third of the wrap. Don't add too much as it still needs the meat adding.
Add some Dust Bros seasoning
  1. Step 3: Sprinkle on a bit of seasoning. I've used Dust Bros Everything Epic, but you can just use a bit of salt and pepper if you wish.
Add the German Sausage meat slices.
  1. Step 4: Add the German Sausage slices to the top of the salad.
Tuck the wrap sides in and roll.
  1. Step 5: Tuck in the side of the wrap and begin to roll from the filling side.

  1. Step 6: with both sides tucked in (to stop filling falling out) roll further on.

  1. Step 7: The wrap is now fully rolled. This can be stored for eating later or prepared for eating now.

  1. Step 8: Slice the wrap in half and serve.

If you are serving later, you can slice once the wrap is rolled and then wrap in cling film as a whole wrap. This will stop the filling falling out.

Quick Tip

When serving this wrap as part of a buffet, slice each one 3 times and make smaller "finger food" sandwiches allowing bitesize servings which are easier to manage.

Variations on this wrap

This recipe is a simple wrap dish but can be swapped about with different fillings. For now, lets keep some German sandwich options.

  • Open Sandwich - a lot of times a German sandwich will arrive as an open sandwich if served in a café. You can serve this recipe in that style by not doing the fold over.
  • More fillings - try adding some coleslaw or sauerkraut as a further filling.
  • Sweet mustard - another German option to add a bit of a kick and give it a little something more.
  • Change the bread - It doesn't have to be a wrap. This sandwich would be great in a crusty roll or on a slice of rye sourdough bread.

Storing your wraps

For the best results, these wraps are at there best if eaten on the day you make them. If making for lunch, store them in clingfilm or aluminium foil for extra freshness.

Top Tip

When slicing the wrap if eating out and about, slice in the middle then put back together before wrapping in foil. This will keep the freshness in and stop the contents falling out during transit.

Ingredients

  • 100 g mixed salad Can be made up with various lettuce, tomato, cucumber, onion etc
  • 50 g German sausage slices
  • 1 tortilla wrap
  • Pinch Dust Bros Everything Epic seasoning Salt and pepper are a viable alternative.
  • ¼ teaspoon butter

Instructions

  • Butter the tortilla wrap or spread a little mayonnaise if that is preferred.
  • Spread the sliced salad over 1 third of the wrap.
  • Sprinkle over a little of the seasoning to give the salad a bit of extra flavour.
  • Arrange the German sausage slices along the top of the salad.
  • Tuck in the sides of the wrap and then roll to make the wrap shape.
  • Slice in half and serve with a side salad or some crisps.

Notes

If you are making this to go as part of a buffet, slice the wrap into 4 by making three cuts  to make them bitesize wrap sandwiches.
Don't overfill the wrap as this will make folding into a wrap shape really difficult.
