Introducing my KFC style fake away halloumi fries
This amazing snack recipe is the way to make the ultimate KFC halloumi fries right in your own kitchen. One of my most epic comfort food snacks and the exact one I discussed on the Start-up Dad podcast when I featured on there.
These fries are using my ultimate style KFC copycat coating and when the chipped halloumi fries are covered in this coating and deep fat fried, the result is unmistakable. You will keep coming back to these fries as a tasty treat.
Ultimate KFC style copycat coating ingredients
You know the secret recipe? Well it's a secret. However this isn't a bad effort in copying it even if I do say so myself. It has a lot of herbs and spices in it, along with a base of white flour. My tip here is to make it in bulk and then use it as and when you need it.

KFC Halloumi fries for any time
Although this is a bit of a treat, halloumi fries are a sought after accompaniment to any sort of meal. They go well with a burger or a salad. Not matter what the mood, the fries are sure to be eaten up. Keeping a few blocks of halloumi in the fridge ready to be sliced and diced into fries, along with the coating in a tub in the larder means that the fries are good to go within 10 minutes.
KFC recipe 11 herbs and spices
The coating is a simple mix of the famous 11 herbs and spices and I think these come pretty close to the real deal. It is the flour coating that adds the fluffiness when the fries hit the oil. Keeping them in the oil for 2 to 3 minutes initially lets the coating form. Then lift them out and let them rest for a few minutes in the deep fat fryer basket.
Equipment for frying Halloumi fries
Then dunk them back in the oil to brown off fully for around 1 minute. This will give your halloumi fries a crispy finish. If you don't have a deep fat fryer, try this Swan one from Amazon (it's the one I use at home). Not overly expensive and can perform most deep fat frying requirements for a small family.
Serve with a burger or summer salad for a nice snack along side your meal.
How to make KFC style halloumi fries

- Step 1: Mix all the dry ingredients in a tub (apart from the cheese). Shake them all together.

- Step 2: Chop the halloumi block into equal fries of about 1cm square. One block of halloumi normally makes about 9 to 12 fries. Take each slice of halloumi and dip in the mix. Coat it fully but don't be too zealous.

- Step 3: Cook for an additional few minutes until fully browned and then drain in the basket for a little while.

- Step 4: Once drained, serve along with a dip of your choice.
Best way to store Greek Halloumi fries
Storing the KFC style coating mix
The coating mix for the halloumi fries can be made in bulk and stored for a while in an airtight tub. Having mixed up all the herbs, spices and flour then the mix will keep for a few months providing the air doesn't get to it. The recipe here states to use 1 block of halloumi however all the ingredients in this list will actually make enough for about 3 blocks of cheese worth of fries.
Top Tip - How much halloumi to use
We generally find that one block of halloumi will make enough fries for our family of 3. You don't want too many as they are not the healthiest snack in the world, a serving of 4 or 5 fries per person is probably enough as a portion.
Storing The Fries
To be honest, these halloumi fries are pretty much eaten in one serving so I've never really tried to store them past a meal time. My suggestion would be if you needed to make some to reheat the following day, store them in the fridge. They will reheat really well in the air fryer, go for about 3-4 minutes at 200C.
Not Just Halloumi Fries
Don't forget, you can use this coating in your deep fat fryer to coat all sorts of food to give it the KFC Style taste. Coat some chicken pieces for a popcorn chicken type snack. Or even try coating cauliflower florets to give it a different taste while eating your veg. The opportunities are endless as to what you can use this mix for.

What to serve halloumi fries with
You can use this coating for these fries on chicken to get a KFC style coating. This is known sometimes as a fake takeaway or 'fakeaway'. A great money saving alternative to the usual high street chains.
You can use this recipe to make KFC fries which are normal fries but with a KFC coating. You can try using my air fryer chips recipe and coat using the KFC style coating before cooking.
You can make the fries or chips in the same way slicing up potatoes. Dry them well and then coat them in my KFC style rub before spraying with a quick spray of oil and then air frying for 20 minutes until crisp.
Top tip - make sure the potato is really dry before going into the air fryer. This will help crisp up the chips.
The Recipe

Ultimate KFC halloumi fries
Equipment
- 1 Deep fat fryer Or pan with oil for frying
Ingredients
- 1 Block Halloumi cheese
- 1 teaspoon Table salt
- ¾ teaspoon Dried Thyme
- ¾ teaspoon Dried Basil
- 2 tablespoon Paprika
- ½ teaspoon Dried Oregano
- ½ tablespoon Celery salt
- 1 tablespoon Garlic salt
- ½ tablespoon Black pepper
- ½ tablespoon Dry mustard powder
- ½ tablespoon Ground Ginger
- ½ tablespoon MSG Optional
- 1 Cup Plain white flour
Instructions
- Mix all the herbs and spices into a bowl and stir together. Switch on the deep fat fryer and get it up to 180°C1 tsp Table salt, ¾ tsp Dried Thyme, ¾ tsp Dried Basil, 2 tbsp Paprika, ½ tsp Dried Oregano, ½ tbsp Celery salt, 1 tbsp Garlic salt, ½ tbsp Black pepper, ½ tbsp Dry mustard powder, ½ tbsp Ground Ginger, ½ tbsp MSG, 1 Cup Plain white flour
- Slice your halloumi into fries.1 Block Halloumi cheese
- Coat your halloumi fries in the herbs and spice mix.
- Once coated, keep them separate to each other so they don't stick until the oil is ready and at temperature.
- When ready, drop them one by one into the oil and let them cook for about 2 - 3 minutes until golden. Lift them out and drain for a few minutes before finally giving them another 1 minute in the hot oil to properly brown off. Drain and serve.
