There is such a variety of rice dishes which cater for all kinds of diet. So deciding what to eat with fried rice can be a challenge. This recipe I have collated combines a few items into a fried rice dish. You can add or subtract anything you wish and it still works. This one is all about experimentation.
This is a recipe for fried rice with suggestions on what to eat with it. These are instructions for chicken and vegetable fried rice.

While there are no hard and fast rules as to what to accompany the rice with, I have listed a few suggestions to give you some inspiration.
Rice is a simple dish to make and my steamed rice recipe on this site works well as the building blocks to this. So where there is a call for rice you can use the steamed rice recipe or the rice in a Ninja Foodie recipe, both would work ok.

Ingredients for Veggie fried rice
While this recipe is a post to inspire thoughts an ideas, it forms the basis of one of the most simple egg fried rice recipes I've ever done. Apart from that, the other ingredients are the vegetables below.

- Broccoli - Broccoli fried rice will work on its own. You could fry up or steam at bit of broccoli and add the rice to the pan. Nothing else would be needed and it would still work.
- Onion - A staple recipe ingredient for most dishes, bringing flavour and body to the dish.
- Garlic - Strong in flavour it packs a punch for dishes. Top tip - if a recipe ever calls for 1 clove of garlic, add 2.
- Carrot - Another great easy root vegetable to put in many dishes. Work well in curry, either as diced chunks or as thin slices.
- Eggs - You can't have an egg fried rice dish without egg? Unless it's a fried rice without egg recipe (vegan suitable). This one is not though.

Instructions
The recipe instructions here are for an egg fried rice dish with chicken and vegetables. The dish can be quite versatile by simply adding or removing items. For example if you want to eat broccoli egg fried rice, leave out the chicken and carrot.
I would recommend leaving in the onion and garlic for all the dishes, but it is entirely up to you if you want to add or remove the potent flavours.
Marinade the chicken

Dice the chicken and put this in a bowl.

Mix the 2 table spoons of sesame oil, 2 table spoons of soy sauce and 1 tablespoon of peri peri sauce marinade ingredients together and mix.

Mix the raw chicken and marinade together until the chicken is fully coated.

Cover it with cling film plastic wrap or a stretchy bowl cover (or shower cap) and place it the fridge. Leave it to marinate for at least an hour, but ideally overnight (up to 24 hours).
Cook the chicken and prep the eggs

When ready to cook, add some sesame sauce to a frying pan and place on a medium to high heat. Cook the chicken until golden brown (around 5 to 10 minutes). Place the chicken in a bowl on one side until needed.

In a small bowl, crack three eggs. Add a pinch of salt and pepper and then mix together.
Prepare the vegetables

Chop all the carrots, broccoli and garlic ready for the pan. Dice the onion as per my how to chop an onion guide and add that too.

In the same frying pan (or a fresh frying pan with new oil), stir fry the vegetables over a medium high heat for 3 to 5 minutes.
Bring the dish together

Turn the heat down a little and move the veg to one side to make way for the eggs. Pour in the egg mix.

Cook the eggs through until they have nearly dried up and fall apart.

Pour in some cooked rice. Steamed rice works best but you can use packet rice. Check out my steamed rice recipe for more guidance.

Mix the rice through and then pour in another 2 table spoons of soy sauce. Mix thoroughly. If making a broccoli fried rice, stop here at serve up.
It's a good idea to use a bit of sesame oil when frying the egg. Just a teaspoon of oil will be enough to give the flavour of egg fried rice that you get in the takeaways. Try an organic sesame oil like this one from Biona.
Serve up

If adding chicken, now is the time to add in the prepared chicken from earlier. Add it to the pan and stir in.

Serve up once all mixed together.
Hint: If the veg is a bit too al-dente (hard) then add a splash of boiling water to the frying pan to get the steam going. This will help soften up the veg in the cooking process.
Substitutions
As mentioned earlier, there are so many types of dishes which work as a fried rice dish so deciding what to eat with it does not need to be difficult. It can be whatever you have in. Try experimenting with various options.
- Broad beans or green beans - instead of the broccoli you can try these bean variations.
- Rice - If you don't fancy cooking rice from scratch, use a packet rice from the microwave or even try with pasta.
- Vegetarian - avoid adding the chicken and this is a great vegetarian egg fried rice recipe.
Variations
You can try some variations of the recipe to mix it up a little.
- Spicy - The peri peri sauce add some kick, but you can always add a hotter sauce if you are feeling spicy. Check out the Jerk Chicken Seasoning recipe which spices up the chicken.
- Pasta works well as an alternative to rice.
Equipment to make egg fried rice

Storing egg fried rice
This dish will store well in the fridge for a few days. Although I wouldn't really recommend it, you can freeze the dish once cooled but you must ensure to defrost thoroughly in the fridge before re-heating. You must also make sure it is piping hot before you serve.
Never refreeze anything which has previously been frozen.
Top tip
Just experiment with the flavours of this recipe. There is no right or wrong way to do it. It is a great money saving recipe and is good for using up food and avoiding food waste.
FAQs about Fried Rice dishes
Fried rice is the technique of flavouring cooked rice. While often it is cooked with egg, there is no requirement for it and the oil used it what does the frying. So yes, you can cook fried rice without egg.
You can't go wrong with a simple soy sauce to accompany rice and chicken. This will add that eastern flavour which tastes great. Other sauces you could try are oyster sauce, hot sauce or even nduja paste.

Vegetarian version
- 100 g Cooked rice
- 150 g Broccoli
- 150 g Carrot
- 1 Large Onion diced
- 2 cloves Garlic finely chopped
- 3 Large Free range eggs
Non Veggie Version
- 400 g Free range chicken breast diced
For the Chicken Marinade
- 2 tablespoon Sesame oil plus more for cooking
- 2 tablespoon Light Soy sauce plus more for serving
- 1 tablespoon Peri Peri sauce

Prepare and Marinade Chicken (Non Veggie Version)
- Dice the chicken and set aside.400 g Free range chicken breast
- Mix together the soy, peri peri and sesame sauces. Mix with the chicken and cover in the fridge. Ideally overnight.2 tbsp Sesame oil, 1 tbsp Peri Peri sauce, 2 tbsp Light Soy sauce
- In a large frying pan, add a splash of oil and on a medium high heat cook the chicken through. Set aside until ready to serve.2 tbsp Sesame oil
Prepare Vegetables
- Chop and dice all vegetables.150 g Broccoli, 150 g Carrot, 1 Large Onion
- Crack the eggs into a bowl and mix together with a pinch of salt and pepper.3 Large Free range eggs
- In a large frying pan, add a splash of oil and on a medium high heat add the garlic then cook the vegetables through for 3 to 5 minutes until softened.2 cloves Garlic
- Move veg aside and pour in the egg mix. (See picture instructions in main post)
- Cook the egg through and then mix with the vegetables. Add the rice and then stir in. Add an additional 2 tablespoons of soy sauce and stir.100 g Cooked rice
- If making the chicken version, add the chicken in now. If making the vegetarian option, serve up without the chicken.

Food safety for rice
Extra care should be taken when reheating rice. It should never be reheated more than once and the rice should be piping hot when reheated. Failing to take here here can cause food poisoning illness.
If you are storing the rice, allow rice to cool and then refrigerate. Never leave the rice out unrefrigerated for long periods of time.
