Equipment

Ingredients

Vegetarian version

  • 100 g Cooked rice
  • 150 g Broccoli
  • 150 g Carrot
  • 1 Large Onion diced
  • 2 cloves Garlic finely chopped
  • 3 Large Free range eggs

Non Veggie Version

  • 400 g Free range chicken breast diced

For the Chicken Marinade

  • 2 tablespoon Sesame oil plus more for cooking
  • 2 tablespoon Light Soy sauce plus more for serving
  • 1 tablespoon Peri Peri sauce

Instructions

Prepare and Marinade Chicken (Non Veggie Version)

  • Dice the chicken and set aside.
    400 g Free range chicken breast
  • Mix together the soy, peri peri and sesame sauces. Mix with the chicken and cover in the fridge. Ideally overnight.
    2 tbsp Sesame oil, 1 tbsp Peri Peri sauce, 2 tbsp Light Soy sauce
  • In a large frying pan, add a splash of oil and on a medium high heat cook the chicken through. Set aside until ready to serve.
    2 tbsp Sesame oil

Prepare Vegetables

  • Chop and dice all vegetables.
    150 g Broccoli, 150 g Carrot, 1 Large Onion
  • Crack the eggs into a bowl and mix together with a pinch of salt and pepper.
    3 Large Free range eggs
  • In a large frying pan, add a splash of oil and on a medium high heat add the garlic then cook the vegetables through for 3 to 5 minutes until softened.
    2 cloves Garlic
  • Move veg aside and pour in the egg mix. (See picture instructions in main post)
  • Cook the egg through and then mix with the vegetables. Add the rice and then stir in. Add an additional 2 tablespoons of soy sauce and stir.
    100 g Cooked rice
  • If making the chicken version, add the chicken in now. If making the vegetarian option, serve up without the chicken.

Notes

If the vegetables don't cook thorough fast enough for your liking and they are still a bit hard, try adding a splash of boiling water to create steam to soften them.
