Ever fancied a KFC but wanted to make your own? I’ve managed to get the taste and texture down to as close as I can get it to a real Kentucky, but the proof is in the taste.
This a recipe which looks into the southern fried chicken coating style of a well known chicken shop. While this is not the exact recipe, it tastes quite close to it.

Introduction
I've used this recipe on so many various dishes, whether they be meats, fish (Kentucky fried salmon? that could be a good one to try!) There have been many times when I have wanted to get in the car to go to my local KFC restaurant near me. This recipe saves me doing so as I can now make it at home.
The best thing about this recipe is that it is fool proof, there is no skill in mixing ingredients and rubbing it over a food ingredient. To make it stick, you can use a low calorie cooking spray on the food first before putting on the coating.
Ingredients
- Salt
- Dried Thyme
- Dried Basil
- Paprika
- Dried Oregano
- Celery salt
- Garlic salt
- Black pepper
- Dry mustard powder
- Ground Ginger
- MSG Optional
- Plain white flour
It's useful to have a storage tub to put all the ingredients into for mixing and storing. See the recipe card for the amounts.
Instructions
To make the coating it is quite simply a case of putting all the ingredients together into a bowl or storage tub with a lid and shaking them all together until they are fully mixed. Your coating is now ready to use.
Coating food
Depending on what you want to cook with the southern fried style coating will determine how you need to prepare the food in advance. See these tips to explain how to coat the various types:
Chicken - To prepare chicken, dip the raw chicken in some flour and then dust off any excess flour. Then in a second bowl beat a raw egg together so that you can dip the floured chicken into it. Then allow excess egg to drip off before then dipping into the southern fried KFC coating. Then place this on a tray or wire rack until ready with all the other pieces to cook.
Halloumi fries - If you are making my KFC style halloumi fries recipe then you can skip the flour and egg part and go straight into the KFC style coating. The cold wet texture of the halloumi cheese will stick the coating to the cheese so you can dip and then cook.
Variations
I'm not sure there are too many variations you can add to the ingredients that wont change it from the flavour we are seeking however there are additional options.
Spicy - You can spice things up by adding some chilli flakes or some cayanne pepper to the mix. Whatever you add as the amount for dried thyme, add the same for the spice mix.
Chinese style - Instead of the hot chilli, try adding some Chinese Five Spice mix. Again the same as the amount of thyme you are adding in. This will give it a subtle eastern flavour.
KFC Popcorn Chicken
You could try this recipe with some diced fillets of chicken dipped in the flour, egg and then coated in southern fried mix. If you then deep fry the chicken pieces for a few minutes you will have your own home made version of popcorn chicken.
We just need to figure out the KFC gravy recipe now and we're on to a winner! No more trips out to KFC Wigan needed.
The Recipe

Kentucky Style Southern Fried Coating
Equipment
- 1 Deep fat fryer Or pan with oil for frying
Ingredients
- 1 teaspoon Table salt
- ¾ teaspoon Dried Thyme
- ¾ teaspoon Dried Basil
- 2 tablespoon Paprika
- ½ teaspoon Dried Oregano
- ½ tablespoon Celery salt
- 1 tablespoon Garlic salt
- ½ tablespoon Black pepper
- ½ tablespoon Dry mustard powder
- ½ tablespoon Ground Ginger
- ½ tablespoon MSG Optional
- 1 Cup Plain white flour
Instructions
- Get all the herbs and spice goodness and mix together.
- Add the flour in at the end and then move it to a tub with a lid.
- When using, coat whatever you are frying in the coating and then shake off any excess. Drop them one by one into the oil and let them cook for the required time. If cooking a chicken in the air fryer, ALWAYS cook to temperature and not time.
