  • Slice up the pork belly in to bite size chunks of around 2cm square.
    1 pack Pork belly slices
  • Cover the pieces in BBQ rub. Spray with fry light or coat in oil before putting the BBQ rub on them. Place the pieces on a tray for ease
    1 tsp Salt, 1 tsp Pepper, 1 tub BBQ rub

  • Cook the pork on the tray for up to 3 hours on a smoker which is set for around 130C /250F.
  • Once they have had the initial time, flip the peice over and cover them sparingly in BBQ sauce so it all gets coated. Put them back on the smoker for another 60 - 90 minutes
    1 bottle BBQ sauce
  • Serve the bite size pieces as a side dish or even just have as a snack with a nice cold beer!

Notes

Try using different types of wood chips on the smoker coals to get different flavours. I find fruit woods such as cherry or apple work well with pork based cuts of meat.
