Chicken and Philly with Homemade Pasta

Ingredients

  • 150 g Semolina Flour/00 flour
  • 1 Egg
  • ½ Tub Light Philadelphia Cheese
  • 100 g Chicken
  • ½ Red onion diced
  • ½ teaspoon Garlic finely chopped

Instructions

  • To make the pasta, simply pour the semolina flour onto a clean work surface and create a well in the middle. Crack the egg and mix the two together.
    Knead the two together to make a dough - this will take around 5 - 10 minutes. If needed, add a little water to stop it being too dry.
    Once kneaded, ball together and wrap in cling film. Place in the fridge for at least 30 minutes.

  • When the pasta is ready to roll, put it through the pasta machine and shape as you wish. Don't have a pasta machine, no problem - just use a rolling pin and knife. Don't have those? Buy some pasta :-)
    Hang the fresh pasta on the drying rack and leave until you are ready to cook it right near the end.
  • Now on to the sauce. Splash a bit of olive oil into a pan and add the onion and garlic. Soften them up for a few minutes.
    ½ Red onion, ½ tsp Garlic
  • Add the diced chicken into the pan and cook it through for 5 - 10 minutes. You can use precooked chicken here and just re-heat it. Make sure to ensure it is re-heated thoroughly of course.
    100 g Chicken
  • In another pan, add a tablespoon of salt and boil up some water to cook your pasta in.
  • Add the Philadelphia to the chicken pan and stir in until soft. You might need to turn the heat down so it doesn't burn. Heat for around 2-3 minutes.
    ½ Tub Light Philadelphia Cheese
  • In your pasta pan, add the pasta and cook for around 2 minutes. While its cooking, add a scoop (1-2 tablespoons) of pasta water to the chicken pan and stir in.
    When the pasta floats, its cooked. Serve and enjoy.

Notes

Leaving the pasta to dry in the air will allow you to cook it easily when you are ready. Cover with a dusting of semolina or rice flour to avoid it sticking together.
