Pork Belly Bites
Pork belly in a BBQ sauce
Servings: 4 people
- 1 pack Pork belly slices
- 1 bottle BBQ sauce
- 1 tsp Salt
- 1 tsp Pepper
- 1 tub BBQ rub
Slice up the pork belly in to bite size chunks of around 2cm square.
Cover the pieces in BBQ rub. Srpay with fry light or coat in oil before putting the BBQ rub on them. Place the pieces on a tray for ease
Cook the pork on the tray for up to 3 hours on a smoker which is set for around 130C /250F.
Once they have had the initial time, flip the peice over and cover them sparingly in BBQ sauce so it all gets coated. Put them back on the smoker for another 60 - 90 minutes
Serve the bite size pieces as a side dish or even just have as a snack with a nice cold beer!
